Applesauce, it's a simple recipe, but one that I feel I should share. There can be recipes that I make that use applesauce, or sometimes I use it as a substitute. Of course you can always buy it, but a few times I have found myself mid-recipe with not enough applesauce, and this little recipes has saved me. When I am making applesauce I only add spices if I am making it as a snack, if I am making it to use in a recipe I do not add any spices. I never measure out these spices, I just add a little bit at a time. If you are going to do this make sure that you add a small amount to start and add more if necessary, it's easier to add more than to take some out.

1. Peel, core, and chop the apples and then place them in a medium saucepan.
2. Add the water.
3. Cook on medium heat, mashing the apples as they break down.
4. If you prefer chunky sauce then it is complete. If you prefer a smooth sauce use a hand blender (or blender) to puree.
Yields: Approximately 1 1/2 cups

- 3/4 cups water
