You can never go wrong with good old bran muffins, but I was wanting to mix it up, have something a bit different. My husband suggested apple bran muffins, and then once the idea was in his head he really, really, wanted them, so I made these tasty little guys. I used the Robin Hood brand banana bran muffins as my base recipe but I tweaked it a little bit. I hope you enjoy it and happy baking!

1. Preheat the oven to 375F
2. Peel and core the apple and cut it into small chunks.
3. In a bowl all of the dry ingredients.
4. In a separate bowl whisk together the eggs, apple sauce, milk, and canola oil.
5. Add the liquid mixture to the flour mixture.
6. Add the apple chunks to the mixture and mix until all of the ingredients are combine.
7. Line a muffin tray with muffin cups.
8. Add 3 tablespoons to batter to each muffin cup.
9. Bake for 15-18 minutes or until a toothpick inserted to a muffin comes out clean.
Yields: Appr. 18 muffins
